Preparation method for 15 to 20 cookies: make sure all ingredients are at room temperature. Preheat the oven to 165°C (fan oven 150°C). Mix 400g of mix and 160g of soft (cream) butter in a bowl and mix with dough hooks for about 2 minutes until crumbly, (Lactose-free recipe: replace the butter with 120g of seed oil such as sunflower or rapeseed). Add 50g of egg (1 piece M) and mix until a cohesive dough forms. Roll out the dough on a surface lined with baking paper or a little flour to about 0.5cm thick. Cut out shapes with a gingerbread man cutter (+/- 10cm) or cut them by hand. Place the cookies on a baking sheet lined with baking paper. Baking time 20-25 minutes.
Let cool and decorate with sugar icing and/or fondant.
